3 Summer cocktails to try now

It’s high-summer in the city and by now, you’ve probably spent hours (if not weeks) wander-lusting over last year’s travel highlights from the comfort of your couch. You may not be sipping spritzes on an Italian cliffside, but you can still make the most of the season, even with a mask on. Soak up the last months of summer in style with a flowy dress, the new slides you snagged on sale, and mix up a cocktail that will transport you to the virtual vacay of your dreams. Here are some of our favorite recipes to try now.

Where We Wish We Were: Italy

Amalfi & Aperol. Is there a better combo? We think not. Create your own take with an Italian-inspired picnic and fizzy cocktail. We’re partial to classic Aperol spritz, but Limoncello is a refreshing twist. Top off with a chic umbrella (or striped blanket) and your favorite take-away pizza. Now, that’s amore.

The Classic: Aperol Spritz

· 2 oz Aperol

· 3 oz Prosecco

· Splash of sparkling water

· Orange slice for garnish

The Twist: Limoncello Spritz

· 2 oz Limoncello

· 3 oz Prosecco

· Splash of sparkling water

· Lemon slice for garnish

Where We Wish We Were: Mexico

Wishing you were in Tulum? Try spicing up Tuesday with a few close friends, a DIY taco bar, and some salt-rimmed margaritas for the ultimate summer fiesta.

The Classic: Margarita

· 3 parts tequila

· 2 parts fresh squeezed lime juice (about 2 limes per serving)

· Sugar, agave, honey, or simple syrup to taste

· Salt for rim

The Twist: Paloma

· ¼ cup tequila

· ¼ cup grapefruit juice

· ¼ cup sparkling water

· 1 tablespoon lime juice

· 1 teaspoon sugar

· Grapefruit wedge for garnish

Where We Wish We Were: Brunch

When in doubt, brunch. This one doesn’t require a virtual vacay – you can dine alfresco at your go-to neighborhood restaurant or throw together all your favorite foods for an Instagram worthy spread. Just don’t forget the bottomless mimosa’s (or Bellini’s).

The Twist: Mimosa

· 1 bottle Prosecco

· Orange juice

The Twist: Peach Bellini

· 1 bottle Prosecco

· Peach puree
